I went through my drawer of disks and found 2 restore disks. Amazingly the one from my iMac DV said that it was for that computer! I tool the other restore disk, popped it in my newer iMac and VOILA! The flat panel iMac came with Classic installed by virtue of an OS 9 System Folder, right or wrong? The same is true of any new Macintosh today.

So doesn't Apple provide a "Restore" set of media, CD or DVD, which will put Classic back on the new machines?

Nope.
The iMac discs are machine-specific and won't work on your new iMac,
sorry.
More bad news: if you didn't install the OS 9 *drivers* back when you reinstalled OS X (I don't know if they are installed by default, I believe they are not), then you'll have to install those first. Hopefully all that's involved is just loading the OS X CDs, skipping to the "custom install part" and installing JUST the OS 9 drivers (be careful that that's ALL you install), then installing the OS 9 you get from buying a retail copy of OS 9 for cheap from someone like [list sponsor] Smalldog.com or megamacs.com.
