Speaking from my own experience, the G5 iMac runs Photoshop very well. I upped my RAM to 1 gig. The main factor that you need to consider is how much you're willing to spend. The tower and cinema display will run about $5000 and the iMac will be a little over $2000 with the RAM upgrade. The second thing you'd need to consider is what you need to do with it and what future use you're going to need. The G5 tower will probably continue to be upgradeable whereas the iMac isn't.
I think that's a better answer than 'Duh'.

Any suggestions would be appreciated:

I have been asked to assist with a photo restoration project and we are
trying to decide between two computer set ups:

1. the new 20" G5 iMac with some RAM upgrades
2. a G5 tower with a 20" monitor (may not be the Apple cinema monitor)

The majority of the work we do is in Photoshop so we need a fairly powerful
processor with reasonable upgradeability options and good storage space.

These two computers are not really comparable.

Both can handle Photoshop with great aplomb, but quite obviously the dual-G5 tower is going to be able to do so more powerfully than a single-proc iMac G5. Duh.

There's more than a little difference in the price, the space requirements and so on. If those things are of no consideration, then of course the dual trumps the single.
