If I'm following this thread correctly, here's what I did:
1. Hooked up digital video camera(DVC) to VCR or DVD player. You can even daisy chain DVD ---> VCR---> DVC without actually recording onto a VHS tape (I use an S-video connection)
2. Recorded from VCR to DVC
3. Plugged DVC into iMac, launched iMovie
4. Imported into iMovie
5. Exported file to Quicktime
6. Launched iTunes
7. Imported file and if needed I converted to Mp3
It is much simpler in practice than looking at the list!
I have a Sansui Dual VCR/DVD-R/RW deck. I found the VHS tape and tried to dub it to a DVD-R in the deck. Six hours later it finished, I think. I tried to play it in my iMac SuperDrive but it said that it was an "unknown" disc. I then tried to play it in my Fisher DVD player and was told that it was "no play".
Rather than try this again, I've decided to hook the audio out of a VCR to my Griffin Technology iMic and record directly into the iMac.
