Mac OS X interacts with different video cards in different ways. On my G3 iMac, 640x480 is supported, but it's not available on my G5 iMac (I think -- I'm not in front of it to check at the moment). There are programs out there that will allow you to override the "recommended" video choices, but I strongly urge caution -- you could permanently screw up the monitor.
On a CRT you could damage it by going to the wrong refresh rate (in part, determined by the resolution). Most newer CRT monitors are protected but it still pays to be careful. But on an LCD you can't because it can't actually change the resolution of the display, it just interpolates or scales down the display area. There are no high frequency sweep circuits to overload which is what gets damaged in a CRT.
