You did say it was a new Epson printer - right?
Epson doesn't use the apple system print monitor.
Epson has there own print monitor typically called something like EPSON Monitor2 or EPSON Monitor3. They show up in the extensions folder as applications while the Chooser has (in my case) 'EPSON Stylus(EX)' and 'SC600' as printer choices along with the standard Apple system choices.
If the quick and dirty that I suggested before doesn't work try entering the classic mode and reinstalling the whole 'EPSON printer driver installer.' so that classic system 9 can find it.
