Have you looked into using nicl (the interface to NetInfo Manager from the command line?)
When I had a similar problem, I booted into single user mode, did mount -uw / and then was able to fix things. (Actually, my problem was that I accidentally removed all of the admin users from my Mac). Try this: Once you have mounted the hard-drive, type 'visudo' This is how you grant users permissions to do stuff as Administrators (in a unix world). For a user that you have access t (i.e. you know their password), add a line to grant them permissions like this: username ALL = ALL Then press 'Escape' and type :wq to exit (you were just in the Unix text editor, vi). Now when you boot and login, the username that you just modified will have some admin privileges. You may be able to use the System Preferences interface to do the stuff that you wanted (I can't remember if you can), but you will certainly be able to use nicl from Terminal to update the NetInfo database and grant the privileges that you need.
