There are so many questions implied in your post that I don't know 
where to start with specific advice, so I'll jump to general advice. 
There are some very good books about Macs out there.  I really like 
David Pogue's "The Missing Manual: Mac OS X".  (There's a separate 
edition for each version of OS X)  The book contains lots of good 
info about what's in OS X and how it works, including a lot of stuff 
that's rather hidden in the OS.  There are also some books 
specifically for Windows to Mac switchers.

I don't want to discourage you from posting questions here, but you 
could spend weeks posting and still not get as much information as 
from one evening with a good book.
