Just set up a queue for him (don't reject his messages), let him write a
script to issue the ETRN command (etrn @hisdomain.com) to your mail server
(via telnet) when he is connected and all mail (bound for his domain) will
be dequeued to him. This requires that he have a static IP address, and you
set his server up as the primary MX record (DNS), and set yours up as the
secondary MX record. When mail servers try to reach him while he is
offline, they will pass you the mail, you hold it until he connects and deQ
it to him. Simple Huh? There is an article on the IMAIL support site
detailing the configuration considerations of this task such as host file
entries and queue timing etc. Just be sure he picks the mail up at a pretty
regular schedule and your server will not get beat up too bad. In fact
IMAIL does this quite well.
