Not restore, but he could recreate everything except the passwords and aliases by inventorying the directories he has backed up.  The adddomain and adduser utilities may come in handy with this, but it will take some time to recreate everything, and you'll need to give all users new passwords.  Aliases are gone, so you'll have to recreate them from memory.   Once you have all users and domains back in IMail, then stop the services and restore the directory structures.
