I totally agree with you. I also try to keep a box per service.
My rationale for keeping a secondary DNS in the same box with Imail was:
Since Imail will query a DNS server in the same box, performace will
increase.
But the following point has made me think twice (even though it says that
Does not apply after version 8.12) :
3.) (Does not apply after version 8.12.) Another DNS device on the same
server is conflicting with IMail's DNS resolver.
- IMail's DNS resolver listens on port 53. Another DNS device (such as
a DNS server) running on the same computer as IMail will cause issues.

Sometimes (not always) after running fport, I have found the imail
smtpd32.exe listening in port UDP 53--weird thing-- at the same time that
the windows dns.exe also is listening in port UDP 53.

It depends on your network and your budget. I always prefer to have this
kind of servers (dns, dhcp, web proxy, etc) on a separate box for 2 reasons,
avoid unnecessary load and avoid having 2 or more services down when the box
fails.
If you have a lot of DNS traffic and constant maintenance, that means you're
taking bandwidth away from email traffic and another potential source of OS
failure. If email is down, you know it's going to be only email and you'll
get only email related calls. If you have DNS issues as well, you'll get
those calls too.
