I want to set the relay for "our" customers only. I am confused about which
to select. My guess is Relay For and enter all the IPs that we have.

Question 1 - Do I enter all our IP addresses? We have a Class C, is there a
way to do this without entering ALL of them individually?
sure just use the notation:
xxx.xxx.xxx.0/24
an for Imail "group of ip addresses" fields, the equivalent is:
xxx.xxx.xxx.0 with subnet mask of 255.255.255.0.
Question 2 - will my users still be able to use mail.xxxx.com?
If they are seen by Imail as sending smtp mail from your class C, yes.
If not within your Class C, they will have to use SMTP authentification, setup in the email clients.
OR - should I set it for Relay Local which would include all my dialup
customers?
that's an alternative approach, which is not available, btw, if you are relaying mail for any other mail hosts, say Exchange at your clients' sites. see Imail 6 manual, page 116. Then you are stuck with the relay for <ip addresses> and your dialup users NOT coming into your ip modem ports will have to use SMTP AUTHorization.
