Who is bouncing the mail? Is the attempt in your SMTP logs? If it's not hitting your server (my belief), it won't matter what's in your settings. This may simply be their DNS info is old. When did you change the DNS? What's it's TTL? Is the sender using your DNS or their own?
AFTER you get the mail, only then will HOSTS or any local settings come into play. Add the client's server to your HOSTS file, and that should do it. Unless you have a list of valid users, aliases, and lists maintained by the client's server, don't enter the domain into the IMail control panel.
