The mail server holding the mail will be mailnncorp.com the exchange server will be pulling mail for valentinesystems.com.
In the valentinesystem.com zone, I added the following mx record:
valentinesystems.com [10] MX mail.nncorp.com
ok, that get's the mail "stored".
I added an entry into the hosts file:
192.168.0.1 vsfs1.valentinesystems.com
whoa, what's with the "vsfs1"?? why not just valentinesystems.com?
For this test, I set SMTP to relay mail for anyone...
just for the test, ok...

have you jogged the smtp server through stop/start cycle after you've set it all up?
you have reloaded the DNS server so it picks up the valentinesystem.com zone file?
You do not have valentinesystem.com in Imail as a virtual mail host?
btw, when you get it working, you will see Imail logging:
trying valentinesystems.com
MX connect fail
as it tries to forward the mail to the unreachable exchange.
