Tim,
If IMail thinks the domain is local (one of the defined domains or aliases),
then it won't try outside. So that means that the problem domain is
somewhere in the configuration of your system. Note that this could include
the HOSTS file!
The Relay settings determine what domains IMail will accept email for, too.
With Anyone, IMail will accept _all_ email and try to deliver it, even
though it may not be able to (for any number of reasons, DNS most likely,
see below for my guess!). The other settings will cause IMail to
'authenticate' a user, before accepting his email. Anything other setting
than Anyone, will cause IMail to only acccept email for local domains/users.
Some domains won't 'accept' your email, especially if you are an 'Open
Relay' (which you are with the Anyone setting). So, maybe the problem is not
IMail, but your being in a list of 'spammers' and the receiving server using
that list as those from which it won't accept email. They could go as far as
to refuse the connection from your server.
Another possibility for mail not being accepted by the remote, is that you
do not have a PTR record for your mail server. That would give an error
message in the log with something like 'Domain must resolve' in it.
