This is ignoring the main reason to put data & log on two different physical
drives:
The log is used to recover a database is the data gets lost or corrupted. If
the loss
is due to a failed disk, then you also lose the log.

You don't "HAVE" to store the data on one disk and the logs on another. The
server will perform slightly better if you do because it can write both the
data and the log to the disks at the same time rather than having to queue
the two jobs on one disk.
Plus, the logs on SQL Server can get quite huge so it is probably best if
you keep them on a separate disk to the data.
