Creating a "NOBODY" alias is not necessary with Exchange 2000, When used as
the primary incoming mail server there is an option to forward all
unresolved mail to a foreign mail system ( Non Exchange Site ) such as Imail
or Unix.
As for outgoing mail " Domain Masquerading " is another new option in
Exchange 2000.
I however I prefer to use Imail as a list server, or where ever a Corporate
Calendar Server is not required.

We have a client we do this for. What we did was created a "NOBODY" alias
to catch all the mail and placed it into an account with the username being
Global. This put all mail sent to their domain into this one account. Then
on their end they set Exchange to check this account via POP3 every so often
and pull the messages from our server. They then set-up exchange to send
the email to the correct user once it was pulled from our server. I am not
sure how they did this, but they got it working.
As for outgoing, I think they use their own smtp for this or it may go thru
us, I am not sure on that one.
