Have you tried looking through the event logs? Try running performance monitor in counter log mode with different items added to see what happens just before the reboot.

This machine runs flawlessly other that this little quirk. I never have services take 100 percent of the resources and WebMail doesn't consume greater and greater amounts of resources. Just an annoyance when I start getting calls about the mail server not responding and when I look at it it is rebooting. Wierd.
