Have you tried looking through the event logs?

Try running performance monitor in counter log mode with different items
added to see what happens just before the reboot.

About every 4 or 5 days my Imail Server just reboots itself. There is no
rhyme or reason as to the time of day or conditions under which it
reboots

Here are my specs:

Dell Dimension Pentium 3 600mhz 512MB RAM
2 - Seagate 70gig SCSI drives in a RAID 1
Windows 2000 Server Service Pack 2
Imail 7.06
200 users mostly through POP with maybe 6 using WebMail
APC 1300 SmartUPS to provide stable power to the box... the other two
boxes
on this UPS don't reboot at the same time or at all.

This machine runs flawlessly other that this little quirk. I never have
services take 100 percent of the resources and WebMail doesn't consume
greater and greater amounts of resources. Just an annoyance when I start
getting calls about the mail server not responding and when I look at it
it
is rebooting. Wierd.
