I'd get the DNS set on those domains down to a timeout of a minute a week 
or so before the change. It'll hammer your DNS for a bit, but come the 
changeover you can change all the mail server IP addresses and then set 
the time to live right back up again and you shouldn't loose mail.

re: actually changing iMail, as someone has already suggested it's in the 
KB :)
