You can use the "Copy all Mail" command in Imail. But I have found it to be cumbersome if we try to monitor just a few users since we have thousands of e-mail a day. The address we have setup for the monitored mail becomes quite large and slows our server down when we retrieve the mail. We thought about using the "forward" command on the users General Tab...but you will only get a copy of the mail coming in and not going out....
