Don't confuse the message data with the message envelope. The message can have pretty much anything you want it to have. But the envelope must have a From which can be null and at least one rcpt to. The message itself does not have to contain either. The easiest way to learn about this in my opinion is open a telnet session with your own mail server and practice sending smtp commands. Reading the RFCs - well - not exactly something that should be done with any regularity for sane people.
