I'm going to stop referencing the archives. I don't think all the
messages are saved there. I couldn't find this one. Maybe there is a
time limitation. Also strange is the fact that there are 2 imail
archives which I'd never noticed before.

I'm not answering your precise question because you've asked about
store and forwarding. The following though is only about using MS
SMTP for backup mx.

For any backup mail server:

   1) set up your backup mail server
   2) add an A record for the address
   3) add an MX for the A record at a lower priority than your primary

   Now for IMAIL -
   4) add an entry in the HOSTS file on the secondary server pointing
to the IP address of the primary, e.g.: 123.123.123.123 mail.example.com
   5) add the primary's IP into your range of addresses that can relay

*** BIG WARNING: DO NOT put the secondary server's IP address in
the addresses list of the primary or you will
                     become an open relay.

   For MS SMTP -
   4) add a REMOTE domain (for each alias too) and set the remote
domain to forward mail to the primary
   5) remember to control relaying on this thing - it will get you in
      trouble if you don't
