When we moved mail to the current server, all our internal users had
mail2. as their mailserver name. Rather than try to change every users'
setting, it was just easier to put mail2 out there in DNS as well.
In this case, my recommendation would be to keep the mail2 A record, but remove it from the MX record. That way, there won't be any confusion. Mail will still be delivered as normal, except if your server isn't reachable, you ensure that other mailservers will only have to try once before realizing that your server isn't reachable.
