We have a domain that used to be our dialup users domain. Since it is no longer in use for that purpose, we are getting tons of invalid users from imail. What would be better? To have it continue to refuse mail or setup a catchall account and have it route everything that it gets to null?

That depends on what its current purpose is.

Unless you have a reason to receive the E-mail and delete it, you would save bandwidth and other resources by rejecting the mail.
