We use IMAP with various clients (including Outlook). Outlook stores the IMAP messages in .PST files locally (a kind of cached copy) - so all you probably need to do is set up the IMAP accounts (or access current using IMAP settings in Outlook) and get the users to drag contents of 'Local' .PST files into their 'IMAP' equivalents. This has added advantage of providing users with access to their .PST mail from any client, but also requires plenty of disk space on the mail server itself. But even with very large mail files, we've not seen any significant access problems once the initial cache copy is built - network traffic being about the difference between local and network copies only.
Two minor heads-up tho. First is the 'winmail.dat' problem - if you try and view IMAP messages with attachments that originally come from a .PST file (i.e. put into IMAP from a .PST, rather than arriving as new mail) then when viewed with a non-MS client, the messages will have unreadable attachments (the attachment appears as a file called Winmail.dat). You can get utilities to get rid of this and restore original attachment, but it is tedious MS 'Feature' nonetheless. Second is that some local programs that work with Outlook / OE don't "know" about IMAP folders and so can only look for information in 'local' folders. This has been a problem for us with "ACT!" for example.

We just converted from Exchange to Imail due to client license costs of upgrading an older version of Exchange to the latest and greatest Exchange (no more pop3 licenses). Imail is definately more cost effective in our case and offers everything our users thought they needed in exchange - web based email, calendering. During the conversion, I and my crew tried to have exchange and Imail running on the same box...let's say it was a big headache. imap and smtp on one, pop3 on the other, store and forward.
