owner is where the subscribes go to. I created an

No- when I look at one of the emails to my list, it resolves to the list itself.Here is where I'm confused - the list owner address specified on the general tap is where the email will go when someone on the list clicks reply - which means it also needs to somehow resolve to the imailsrv program.
Now- if you set on the Security tab- Allow posting by Moderator, that's when an email directed to your list will be sent to the owner (moderator) who will decide if this email is appropriate for the list. If 'Subscribers' is chosen, an email sent to the list will be distributed to the list members if it has been sent by a subscriber (from the Users list).I know it appears I may be making too much out of a simple thing, but trust me, imail is doing screwy things and if someone can tell me what these alias' should resolve too, which accounts are an alias versus a normal mailbox and how the digest email gets into a mailbox - then I'm sure I could fix this thing!

I'll agree with your first comment where the documentation is a bit confusing- ie- a 'subscriber' is a member of the 'Users list'.
As to your 'Digest Setup' question, do you have any Digest Subscribers? My Digest Mailbox does contain emails, and I only use digest mode when I need it- that is I don't have a digest list without any digest subscribers.
