In the remote mail gateway host field in Imail Admin. can I list more then one server ?.

maybe in the later versions, ime, no.

So that if the first fails Imail will try and send to the 2nd listed server

Because it's cheap, a lot of people run two IMGates. One is used by Imail for outbound. It's been a long-standing desire for Imail:

1. accept more than one entry in the gateway field (IMGate), and step through them.

2. do MX lookups for the gateway host name.

As it is, if the IMGate used for outbound goes down, the Imail admin must intervene in Imail to change the gateway field. ie, Imail/IMGate has inbound redundancy for Internet inbound, but not for the mailbox server outbound.

As on option for IMGate 'advanced', I have a dynamic DNS solution that monitors the outbound host. When the outbound host stops responding, the script dynamically changes the short-TTL A record for the outbound hostname to an IP that is responding, and switches the A record back when the primary outbound host is available, aka, failover. It also works as true load-balancer with a agent within the IMGate machine that reports when an IMGate is

1) overloaded on inbound traffic (IMGate inbound queue congestion)
2) overloaded on outbound traffic (IMGate delivery congestion)

and bring another machine(s) on-line to help with the overload (and go off-line when load goes down). You can do the load-balancing/failover equivalent, for several $1000s, with dedicated hardware like Radware Linkproof, but what's the point? :)
