You want "vos remsite". (It's the symmetric operation to "vos addsite").
As far as I know, "vos delentry" will only remove entire VLDB entries,
which isn't what you want. Also AFAIK, there's no easy way that the
operation "remove this particular replication site from every single
volume in the VLDB" can be performed automatically (using only the
Transarc-supplied tools).
