I've got the stopping/starting of ferret as part of our scripts for managing our mongrels.
All you need to do is to do is cd [insoshi app directory] script/server -e production start You need to change into the app directory since the ferret_server script (and the acts_as_ferret plugin) assumes you are in that directory. You'll need to add this whatever script(s) get called on startup (an rc.local or something similar). Let me know a bit more about your configuration (Joyent accelerator) and I can give you more exact details.
