To truly turn off aero , disabling desktop composition isn't doing all the job. You actually need to switch from an Aero Desktop theme to a non-aero theme, only that way you'll have turned off the whole aero.
And as Tribaljet said, some games will run better with/without aero, you'll need to experiment that yourself with the games you play.
