There isn't any default value that will work universally. Just as some
mail servers reject messages with empty "From:" line (a bad idea for
several reasons), some reject messages with invalid local addresses of the
"From:" line, and most reject message where the domain name part of the
"From:" address can't be resolved in DNS.

Since you want to avoid making those fields mandatory in Preferences, how
about making them mandatory only if the user tries to configure e-mail
notification for a device?  If the user user tries to configure e-mail
notification for a device, and if the appropriate server and sender
address information is not already configured in Preferences, InterMapper
either puts up a warning saying e-mail notification will not be enabled
until the necessary info is added to Preferences, or automatically opens
the Mail Preferences dialog and refused to continue until the necessary
values are provided.
