I'm pretty sure this will work, though installing an update later may
require you to remove the symlink & re-create it again.
I know you can specify an alternate settings directory for
intermapperd in the launchd .plist file (the man page has more details
on that) - don't know if that affects IMDC as well or if it would live
through upgrades though.
(Incidentally the same .plist is the one to edit to make intermapperd
start up as someone other than the user who installed it :)
The IMDC database is in postgres if I remember correctly, so you can
move that with tablespaces (or make sure to initdb your postgres
cluster on the volume you want to use - probably the better choice if
your system volume is a SSD)

Maybe the application doesn't really care but the installer does.
