I've noticed that (desktop) Safari 4.0.x seems to be overzealous in caching and have had trouble getting it to ignore/disable caching when I've made changes to the cache or turned it off (by removing the manifest element from the html tag)
I'm hoping someone on this list might be able to provide insight on what has worked for them on iPhone, (desktop) Safari or any other platform. If anyone finds anything with Google or from another list, I'd love to see the results posted here, too.
