[~vnick], yes, all versions have the same fonts installed by default (DejaVu 
and Nimbus).

Out of curiosity, I created an image based on Buster 
(tomcat:9.0.56-jre11-openjdk-buster to be precise), and the underscores were 
displayed properly.

I would believe the issue is due to changes in libpango. There are bug reports 
on the issue, after the 1.44 update (buster uses 1.42, and bullseye 1.46, that

[~neelrath] apart from the update to guacamole 1.3.0, are there any other 
updates you know of?
