OK, OK, but why are you creating the template with iText?
Normally somebody gives you a PDF form to fill with iText.
If you have to create the template yourself, you could as
well create the finished document right away.

It doesn't make sense (performance wise) to create the
form and then fill it immediately after.

Unless you have some requirement you aren't telling us about.
