I actually do not remember being confronted with such a signature fields myself. In the case at hand I read that ghostscript, a tool not completely unheard of, created such fields. Thus I thought they might be interesting to support in iText. Eventually I saw, though, that gs created those fields based on some handwritten postscript. This situation makes it quite a lot less interesting to have support for such fields.
