Check out DocumentFont:

http://api.itextpdf.com/com/itextpdf/text/pdf/DocumentFont.html

It allows you to create a BaseFont from a font resource in a PDF.

Warning: DocumentFonts from embedded subsets are going to have lots of
gaps.  Avoid them if at all possible.
