I think Adobe Reader X is correct: it discovers that appearances are needed, it applies some changes (regardless of the fact if there are fields that need to be rendered; it ignores the fact that the /Fields array is empty) and it stores the file with a compressed xref table, improved info dictionary, no more unused objects,...
