Nothing to do with zombiism but why change a perfectly running system?
Afterall we are not talking about Java client-side installations here but
the server environment. I drive a 30 year old bicycle and love it - it does
its job still pretty well. There are lots of insurance companies / banks
out there which still have a cobol host system which nearly has the same
age as my bike. (Not that I like that) But they have their reasons and you
need to accept that there are still people using the old iText versions.
And when they plan to migrate to new environment will they use a newer
version of Java / iText? Most certainly.

But beside of that - did you do such bad quality back then? Was iText such
an horrible, security holey product? The answer is NO. I know you have your
reasons (earn money with your new versions) to bash the old versions and
want people to switch  - but some can't and that for a wide variety of
reasons.
