So in iText 5.X did you totally started from scratch throwing away all old
code? No. I did a comparison once and (except renaming stuff and new
functionality) lots (i would say most) of iText 2.X Code is in the 5.X
code. So to stay in your comparison: You say stop smoking at all - which
would mean stop using iText (5.X) at all. But what you really trying to say
is: "please switch to our new ciggarettes - because they have a better
filter and are reduced in nicotine which will be better for you." Believe
me there is no healthy smoking ;-) and people have their reason to stay
with their old cigarettes...

And could one use RSA 2048 in iText 2.X? Yes.
And with SHA-1 you really need to differentiate the kind of weakness.
Go to https://www.google.de, open the certificate -> details -> algorithm.
Its states: PKCS #1 SHA-1 with RSA-Encryption.

Why does google (and anybody else for that matter) did that if sha1 is as
bad as you point out? They created an certificate in march 2013 which is
based on SHA1. Things are not as easy as you would like them to be....
