One technique, unfortunately not very widely available, is to use
photogrammetry to create 3D models from multiple photos of physical
objects. Physical buildings and architectural ruins have both been
tackled via photogrammetry.
It'd be interesting to see the development of open-source photogrammetry
software as an adjunct to Java3D, maybe combining functionality from
both Java3D and JAI. I think I'd enjoy wandering around a 3D
reconstruction of the city of Melbourne (where I live) as it was 120
years ago.
