I know the question wasn't directed at me but for me the primary issue
is simply a matter of privacy. I don't want Google profiling all my
email and mining my address book to see who I'm connected to and how
it can leverage that information, even if they believe they can show
me that it is for my benefit.

There is also the concern, however unlikely, that my private data may
be leaked. By restricting my data to my Mac (encrypted) and choosing
which contacts records to sync to my iPhone I can control the extent
of the damage should either of these devices be lost or stolen. In an
ideal world the loss of either should not allow my data stored on the
device to fall into another person's hands. Currently, if my data is
disclosed it is because I made a mistake - my fault and mine alone,
and I am empowered to address any weaknesses in my data security
strategy.

With data stored in the cloud I am delegating control and I cannot
identify security weaknesses and take steps to address them for
myself. I am relying on somebody else - who incidentally I'm not
paying - so you can also argue that their concern for my data security
may not be as great as mine is.
