If you can't handle custom fields like that in Jira, introduce an
intermediate service that accepts the stack traces, handles hashing, etc.
and the creates tickets as appropriate.

It's an old trick: Almost any problem can be solved by adding another level
of indirection.  Except perhaps too much indirection...
