I am not sure if the start simple and grow bigger use of iOS vs Windows 7 is fair. Given iOS is derived from Mac O/S originally then Apple started with something big and made it smaller. Linux from which Android is built also started out on the desktop and has been cut down to run in mobile and embedded spaces. Windows Mobile has been generally derived from the desktop in a similar fashion. I think all 3 have that much in common. It may be only a matter of taking a core kernel etc but the Mobile version came after the desktop one and not the other way around.
