Make use of the Windows Accessibility feature, Sticky Keys. This will allow your student to execute multiple key commands with one finger.
I have worked with 2 students who were blind and only had use of one hand. I taught them both to use a technique that we called "Shifted Home Row". This means that you place your four fingers of your one hand on the letters F, G, H and J. This is your home row and you just reach from this position to activate the other keys.
