I have the same issue using Outlook 2007. I found that if I close Outlook and reopen it I usually get rid of the tables but it is temporary and I have to do it again when the tables come back. You can also open the message as html by doing the following: Alt-h+x and then v. You can read the message and then copy what you want or simply close it with Alt-f4.
