are you saving the document each time you've altered it?
sounds to me like you have a different style as default than the normal
default one if you see what I mean.
or could the document be saved originally as read only? this would be also
why the document wont save with the normal style.
can't think of anything else this could be to be honest.

That's what I'm trying to set everything at, but I can't get the documents
to keep it there. There are three or four styles within each document. I
want everything to normal, and I can't get it to save that setting.

What I have done in situations like this is to select all (CTRL-A. Then go
to format ALT-O, you have several options here, you can format everything
to
a specific font and size in the font selection, use the paragraph
selection
to set paragraph formatting and so on.
