Hi,
Try these following steps:
1. Highlight the text by pressing Ctrl+A,
2. Activate format menu by pressing alt+O, then follow it up by pressing E,
3. Press alt+t for title keys: this time, only first letter of the word is
capitalized,
alt+s for sentence keys: this time, only first letter of the sentence is
capitalized,
alt+l for lower keys: this will change all capitalized words into lower
letter words,
and lastly alt+u for upper keys: this will change all lower letter words
into capitalized words.
Hence, don't forget to press enter to correspond with your selection.

I was wondering if I wrote something in all caps and want to change it back
to not being in all caps is there a way to do this using jaws besides
writing it all over again?
I actually did that once last year in grad school while writing a 20-page
paper. Everything was in all caps and I had no idea how to change that so
I had to rewrite the whole dang thing over again.
