To me it sounds like the reading pane is on. This means that when you move up/down in the list of messages they are displayed in the reading pane and therefore marked as read. Go to the View ribbon sub menu, Layout sub menu, Reading Pane and set it to off.

There are settings in JAWS that control what labels (like UNRD) are spoken. So the best you can do would be to go through the JAWS settings.
