I am differentiating between chat and conferencing. Chat is informal, no
particular structure, agenda or goal, social or professional, people come
and go with no particular leader. Conferences tend to be ;-) structured,
formal, have a goal and an agenda and stop when the chairman leaves.

This is why I say we should be careful on naming - 'conferencing' implies a
different envelope to 'chat'.
