Every software have bugs.
There are just bugs that affects you and those which do not.

Stability in a sense of fitting the requirements software was written
and deployed for.
Of course you will never reach stability if the requirements are being
changed.
Fortunately XMPP RFCs are pretty stable and do not require implementing
every single XEP.
